Providence Campus Student Chefs Serve Up Ways to Thank Mom

PROVIDENCE, R.I. - April 9, 2006 – It only happens once a year, so why not make this Mother's Day unforgettable? Celebrate with Mother’s Day brunches at the Radisson Airport Hotel, 2081 Post Road, Warwick, R.I., or the Johnson & Wales Inn, Route 44, 213 Taunton Avenuein Seekonk, Mass.

The Radisson's brunch from 10 a.m. – 3 p.m. will offer a variety of salads, marinated snails and mussels, poached salmon, smoked fish and sliced fruit in its University Ballroom. Also on the menu will be a hot buffet which will include country scrambled eggs, Eggs Benedict, bacon and sausage, French toast with maple syrup and apples, baked scrod, grilled chicken breast, garlic and herb marinated pork loin and carved top round of beef. Adults are $23.95, seniors $21.95, children under 12 are $13.95, plus tax and gratuity.

If brunch is not Mom's thing, then try the Radisson's complete “Mother's Day Dinner-To-Go” dinners. Each dinner is complete with everything needed to serve 10-12 people. Selections include prime rib, baked hearthstone ham, or roast leg of lamb, with prices ranging from $139 to $170. Each dinner also includes soup, potatoes, vegetable, and dessert. Orders must be placed by noon on Thursday, May 10, with pick-up on Mother’s Day, Sunday, May 13, 10 a.m. to 1 p.m. Reservations for the Radisson can be made by calling (401) 739-3000.

At the Johnson & Wales Inn in Seekonk, brunch will be held in its Regency Ballroom from 10 a.m. – 3 p.m. and will include snail salad, lemon pepper mussel platter, smoked turkey mirror and grilled spring vegetable antipasto. In addition, the hot buffet will feature spinach quiche, chicken Marsala, roast pork, seafood Newburg in a pastry cup and carved steamship round of beef. Adults are $23.95, seniors $21.95, children 5-12 are $13.95, and children four and under $5.95, plus tax and gratuity. Reservations are required by noon on Friday, May 11.

For the early-risers, the Inn also offers a Mother’s Day Breakfast Buffet from 7:30 to 10 a.m. for $13.95. Or, treat Mom to Mother's Day Dinner from noon until 6:00 p.m. at Audrey’s Restaurant, located at the Inn. In addition to the regular dinner menu, you can also choose from roasted pheasant, pan-seared tuna and braised buffalo short ribs. Reservations are required.
